AMB Deer Processing's Services

At AMB Deer Processing, we convert a deer into food. By that we mean that we convert a whole deer into steaks, chops, stew cubes, cutlets, etc. If desired, we can also produce smoked hot dogs, smoked Polish kielbasi ring, cold cut bologna, Italian style sausages (sweet or hot), and smoked hams. All cuts are deveined, seamed and sliced, without any fat, and tied where appropriate. There will be no bone chips, blood clots, sawdust, hair, or other non-food items included in your order.

The most important thing to keep in mind when having a deer processed is that we process the deer the way you want it. For example, if you want more stew cubes and fewer steaks, we can do that. If you want the entire deer ground into chopmeat, we can do that. All you need to do is ask for what you want and we will do our best to deliver it.

Please read our advice on how to dress a deer for best results.

For sanitary reasons we regret that we cannot accept any deer parts processed elsewhere. We only process the entire deer, from start to finish, to ensure that our food quality requirements are maintained.

Base price includes cutting steaks, chops, cutlets and minute steaks, boneless roasts, stew, and ground meat, all deboning, as well as packaging in white freezer paper, and, of course, labelling and bagging by type of cut. All cuts are deveined, seamed and sliced, without any fat, and tied where appropriate. There will be no bone chips, blood clots, sawdust, hair, or other non-food items included in your order.
Ground meat is included if desired.
We normally keep the skin, but will return it to you for an additional $5.00 fee.
We do not normally retain the heads, so if you want it back please tell us before we process your deer. There is an additional $5.00 fee for capping the head mounts to preserve them for your taxidermist.

Additional Fees
We normally make sausages out of trimmings that would otherwise be ground into chopmeat or discarded. We can, however, use other cuts should you want more sausages. Five sausage links weigh approximately 1.25 pounds. Hotdogs are approximately seven or eight to the pound. A smoked Polish kielbasi ring weighs approximately two pounds.
Note: the prices for sausages, pepperoni, hot dogs, bologna, kielbasi, etc. do not include adding fat, specificially lard (pork fat) or tallow (beef fat). (See additional services at the end of this section for prices.) Since venison is a lean meat, many clients prefer that some fat be added to improve the consistency and taste. Let us know how much fat you like, if any, as we can vary the mix from regular to extra lean.

Dried Jerkey

We make jerkey from small cuts that would otherwise be ground up or used for stew. (We do not use the premium cuts of steaks, chops, or cutlets unless specifically requested to do so.) Ten pounds of ground deer typically yields about five pounds of jerkey. Note: The price is based on the undried meat weight.
